1 Tb olive oil
1 large onion, chopped
2 lbs. chicken
2 carrots, chopped
2 cloves garlic, minced
3/4 cup dried lentils (soaked overnight)
1 (14 oz) can chicken broth
1 (10 oz) can tomato sauce
1 tsp dried rosemary
1 tsp dried basil
1 Tb lemon juice
1 tsp salt
- In skillet, heat oil and brown onions. Add chicken and cook for a couple minutes on each side. Chicken does not have to be cooked through.
- Cut chicken into pieces.
- Put all ingredients in a crock pot and let it cook on low for the day. You may need to add water as it cooks.
- Serve over rice.
